Custard Cookies

Ingredients:

250g Butter

8 tbsp Custard powder

8 tbsp White Sugar

4 tsp Baking powder

2 Eggs

3 c Flour

1 tsp Vanilla

Method:

Mix the butter, sugar, eggs and vanilla well. Sift dry ingredients twice and then mix into butter mixture. Roll balls and flatten or use a cookie cutter. Bake in medium oven until light golden and cooked through.

Malva Pudding

Ingredients:

Pudding:

1 c Flour

1 c Milk

1 tsp Baking Soda

1 Egg

1 tbsp Fine Apricot jam

1 c White Sugar

1 tbsp Butter

Juice and zest of 1 lemon

1 c cream

Banana Bread

Ingredients:

2 c Flour

½ c Butter

½ t Baking powder

1 ½ c White Sugar

¾ t Baking Soda

2 Large eggs

½ t Salt

1 t Vanilla

¼ c Sour/buttermilk

1 c Mashed ripe banana

Aunt Maria’s Short Crust

Ingredients:

1 packet (500g) Self-raising flour

1 Egg, beaten

250g Margarine or butter well chilled

2 tbsp Sugar

Method:

Grate chilled margarine or butter into the flour. Add two tablespoons sugar. Beat egg well and mix into flour mix. When dough is thoroughly mixed and a crumbly texture, press into dish.
